its almost like there's a universal currency you can use that generally fluctuates slowly and is easily monitored. maybe we should trade with that.

Coins are basically a fiat currency though. Their value isn't tied equally to their use. So oftentimes people won't accept it unless they are buying cheaper things that have a lower relative perceived value. This is mitigated a little by crafting, but only if you care about trying to craft things. Coins have their own downsides that in many scenarios make it worse than taking items.
